ingredients

  • 1 tablespoon coconut oil
  • 1 chopped onion
  • 1 pound broccoli
  • 1/2 pound asparagus
  • 1 pound frozen peas
  • 1/4 pound baby spinach

Method

  • Step 1

    Heat coconut oil in a saucepan over medium heat and sauté the onion for a few minutes. Add stock, broccoli, asparagus and peas to the pot and simmer for 15 minutes. Transfer to a blender and add spinach, salt and black pepper. Blend until velvety smooth. Ladle into bowls, drizzle with cashew cream and toppings.
