Broccoli and Pea Soup

  • 3 heads broccoli
  • 1 1/ 4 cup frozen peas
  • 4 cup stock
  • 2 cups baby spinach
  • 1/ 2 cup mint leaves
  • 1 tablespoon coconut oil
  • Salt and pepper to taste


  • Step 1

    Heat coconut oil in a saucepan over medium heat and sauté the onion for a few minutes.

  • Step 2

    Add stock, broccoli and peas to the pot and simmer for 15 minutes. Transfer to a blender and add spinach, mint, salt and black pepper. Blend until velvety smooth.

  • Step 3

    Ladle into bowls, and top with olive oil and toppings of your choice. I used black rice, pistachios, mint and olive oil.
