Beetroot Hummus

ingredients

  • 1 beetroot
  • 1 can chickpeas
  • 1/2 lemon
  • 1/4 cup hulled tahini
  • 1/2 teaspoon cumin powder
  • 1 pinch salt

Method

  • Step 1

    Chop beetroot into small chunks and add to a food processor with the rest of the ingredients. Blitz until creamy but a little bit chunky. I like to add some of the reserved water from the chickpeas to thin it down until it reaches a nice consistency. Top with some extra virgin olive oil and desired toppings before serving. Enjoy!
