Skillet Granola With Cinnamon And Cardamom

"Girls woke up to the smell of fresh made granola this morning, mama has been up early.. After trying many recipes I realized that the best one is the easiest one to make. I made it in a cast iron skillet (@lodgecastiron) on a stove top - ready within 15 min. Have a great day and tag me if you try. "

Ingredients:
1.5 cups organic rolled oats (#glutenfree)
2 tbs of coconut oil
2 tbs maple syrup (use good quality stuff here)
1 tbs of vanilla extract
1/4 tsp sea salt
1/2-1 tsp of cinnamon (optional)
1/3 tsp of cardamom (optional)
Spices are optional, but the smell when you toast them is hard to beat!
1 cup of nuts/seeds (2/3 cup of walnuts and 1/3 cup of pumpkin seeds)
Directions:
Toast the above granola mix to the desired color, mixing every few minutes ( it took me 15 min on slow temp setting to achieve lightly golden color), alternatively, toast in the oven on 250F for about 25-30 min, mixing every 7-10 min.
Once ready, I added 1/2 cup of pecans and 1 cup of dried tart cherries.
