Spinach And Cheese Roulade

INGREDIENTS
500g spinach
100g butter
125ml milk
5 eggs
150 grams plain flour
1 1/2 tsp baking powder
1 tsp salt
300 g low fat cream cheese
100 ml sour cream
150 g roasted pepper relish(ajvar)
DIRECTIONS
Place the spinach in a large heatproof bowl and cover with boiling water. Set aside for 30 seconds or until wilted. Drain and squeeze to remove excess liquid and coarsely chop it.
Melt butter in a large frying pan over low heat. Add spinach and salt and cook for couple of minutes. Add milk and cook for another few minutes and let cool.
Preheat oven to 180 C. Line a large baking tray with baking paper.
Using and electric mixer, beat the eggs well. Gradually add plain flour and baking powder. Combine the two mixtures together by mixing gently. Spread onto the prepared baking tray and bake for about 20 minutes or until golden.
Take out of the oven and place on clean wet towel on the work surface. Gently roll together with the tea towel into a roll. Leave it to cool for about 30 minutes. Carefully unroll and leave to cool for another few minutes.
Combine cream cheese and sour cream and evenly spread over the roulade. Spread roasted pepper relish on top. Using the tea towel fold into a roulade. Refrigerate for a few hours before serving.
