Roasted Chicken Thigh With Citrus Slices & Fresh Herbs
So this is how last night's dinner turned out to be: roasted chicken thigh with citrus slices and herbs with a side of marinated roasted tomatoes.<br><br>RECIPE:<br><br> Serves 3-4 <br> Ingredients: <br> 6 boneless chicken thighs with skin on or without<br> 5 Tbsp. olive oil<br> 4 cloves of garlic, finely minced<br> 1 red onion sliced fresh squeezed juices from 1 orange and 1 lemon<br> 1/2 Tbsp. orange zests<br> 1 orange and 1 lemon cut into slices<br> 1/2 tsp. smoked paprika<br> 2 tsp. Trader Joe’s 21 Seasoning Salute or any other poultry seasoning of your liking<br> 1/4 tsp. red pepper flakes<br> 1 Tbsp. raw honey<br> salt and pepper<br> finely chopped fresh herbs from 1 sprig of rosemary, a handful of tarragon leaves and a couple sprigs of oregano<br> <br> Methods:<br> Place the chicken thighs in an oven proof baking dish. Prepare the marinade in a bowl by combining the olive oil, garlic, orange and lemon juices, orange zests, smoked paprika, Seasoning Salute, pepper flakes, raw honey, salt and pepper. <br><br> Pour the marinade all over the thighs and place the chicken in the fridge for 1-2 hours (this way the chicken will soak up a lot of the flavors from the marinade).<br><br> Preheat the oven to 400 degrees F.<br><br> Nestled the orange and lemon slices all around the chicken thighs.<br><br> Add the onion slices and the chopped fresh herbs on top.<br><br> Roast the chicken thighs in the oven for about 50 minutes to an hour until they are done.
