ingredients

  • 1 can chickpeas
  • 1 cucumber
  • 1 green pepper
  • 1 tomato
  • 1/4 white onion
  • 1/4 cup crumbled feta cheese
  • 1/3 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon lemon juice
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon black pepper
  • Pinch of salt

Method

  • Step 1

    Drain the can of chickpeas, rinse them with water, then let dry.

  • Step 2

    While chickpeas are drying – chop up the cucumber, onion, tomato, and green pepper.

  • Step 3

    Place the chickpeas, cucumber, green pepper, tomato, and onion in a large bowl.

  • Step 4

    Crumble the feta on top of the veggies, and sprinkle a bit of salt and pepper on top. Give everything a good mix.

  • Step 5

    In a small bowl (or cup) combine the olive oil, red wine vinegar, lemon juice, red pepper flakes, black pepper, and salt. If it’s in the bowl, whisk it together. If it is in a cup with a lid, give it a good shake.

  • Step 6

    Pour the dressing over the veggies, and mix it all together. Refrigerate the salad before eating so it is cold when eating it.
