  • 2 Russet potates, cut into fries
  • 6 tablespoons olive oil, divided
  • Kosher salt, to taste
  • 2 whole jarred roasted red peppers, roughly chopped
  • 8 ounces feta cheese
  • 2 tablespoons white wine vinegar
  • Black pepper, to taste
  • 3 tablespoons Lee Kum Kee’s Sriracha Chili Sauce, plus more for serving

Method

  • Step 1

    Preheat oven to 425°F and line a baking sheet with parchment paper.

  • Step 2

    Add fries to a baking sheet and drizzle two tablespoons of olive oil all over. Generously season with salt. Toss to combine then spread out into an even layer. Bake for 25 to 30 minutes, flipping halfway through, or until browned and crispy on each side.

  • Step 3

    While the potatoes are baking, add the roasted red peppers, feta, the rest of the oil, vinegar, salt, pepper, and sriracha chili sauce to a food processor. Blend until smooth. Pour into a bowl and set aside.

  • Step 4

    Once potatoes are cooked, divided onto plates along with dip.
