  • 1 cup nut butter
  • 1/4 cup coconut oil
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup milk
  • 3 ripe bananas, mashed
  • 3 1/2 cups old fashioned oats
  • 1 teaspoon baking powder
  • 2 - 3 scoops protein powder
  • 1/2 teaspoon Simply Organic cinnamon
  • Pinch of salt
  • 1 cup fresh or frozen blueberries


  • Step 1

    Preheat the oven to 350℉ and grease a 8" x 8" pan with cooking spray.

  • Step 2

    Combine the nut butter and coconut oil in a microwave safe bowl. Microwave for 20-30 seconds or until the oil and nut butter are melted. Stir well.

  • Step 3

    Mix in the maple syrup, vanilla extract, egg, and milk. Next, add in the mashed banana. Stir in the dry ingredients, including the oats, baking powder, protein powder, cinnamon, and salt. Fold in the blueberries.

  • Step 4

    Transfer the batter to the prepared pan and bake for 25-30 minutes. Store in the fridge or freezer.
