For the Sauce
ingredients
- 3 tablespoon soy sauce
- 1 teaspoon brown sugar (optional)
- 1 teaspoon red wine vinegar
- 1/2 teaspoon sesame oil
- 1 tablespoon all purpose flour
- 1 tablespoon almond butter
- 1/4 cup milk
- 2 tablespoon water
- Drizzle of sesame oil
Other Ingredients
ingredients
- 8 oz le mein or ramen noodles
- 1 red bell pepper, sliced
- 2 carrots, peeled and julienned
- 2 heads baby bok choy, rinsed well and chopped into bite size pieces
- 1/2 yellow onion
- 2 garlic cloves, minced
- Sprinkle of sesame seeds
- Any other vegetables you like such as mushrooms, purple cabbage, scallions, etc.
Method
Step 1
Add noodles to a medium-sized saucepan of boiling water and let stand a couple of minutes until softened. Drain, and rinse with cold water. Set aside.
Step 2
Next, make the sauce by combining all sauce ingredients above, whisking until well-combined. Set aside.
Step 3
Heat a drizzle of oil in a large skillet. Add all your veggies (except for green onions) and cook over medium-high heat for about 5 minutes, covered.
Step 4
Remove cover and continue cooking until all vegetables are tender (adding a bit of water if necessary to keep from burning.)
Step 5
Next, add noodles and about 3/4 of your sauce. Cook 3-4 minutes until sauce thickens a bit.
Step 6
Remove from heat, top with remaining sauce, thinly sliced green onions (if desired), and sesame seeds.
