Sourdough Toast With Asparagus And Poached Egg

"It's been a while since I posted an egg yolk appreciation pic... so here it is! Runny yolk over steamed asparagus, perched on a delicious slice of toasted wholemeal. Topped with poppy seeds, pepper & chilli flakes - delicious!"

Ingredients:

Asparagus (4-5 stalks)

Egg

Sourdough

Butter

Himalayan salt

Directions:

Steam aspargus and set aside. 

In a pan of simmering water, create a vortex by swilling a spoon around, then drop the egg in the center then poach for 3-4 minutes depending on how runny you like your yolk.

Whilst the egg is poaching toast a slice of fresh sourdough and spread an even coating of butter on top to melt in. Top with steamed asparagus.

Pinch the egg to allow the yolk to drizzle out.

Sprinkle a little Himalayan salt and a generous pinch of cracked black pepper to taste.
