ingredients
- 1 8-10 ounce package penne pasta, or other pasta of choice
- 1 tablespoon olive oil
- 3/4 cup white onion, diced
- 2 tablespoons garlic, minced
- 1 28-ounce can Muir Glen Fire Roasted Crushed Tomatoes
- 1/3 cup white wine
- 2 tablespoons tomato paste
- 1/4 cup reserved pasta water
- 1 3.8-ounce can diced olives, drained
- 1 tablespoon Italian seasoning
- 4 slices fresh mozzarella cheese, more if needed
- fresh Italian parsley, for topping
Method
Step 1
Cook pasta according to package directions.
Step 2
Meanwhile, heat olive oil in a large skillet over medium heat. Add onion and garlic and saute for 3 to 5 minutes or until golden brown. Add Muir Glen Fire Roasted Crushed Tomatoes, white wine, and tomato paste and stir until well combined. Set sauce aside.
Step 3
Preheat oven to 350°F. When pasta is done, drain, reserving 1/4 cup pasta water. Combine tomato sauce, pasta and pasta water. Add olives and Italian seasoning and mix. Transfer to an oven-safe baking dish and top with mozzarella cheese. Bake for 10 minutes or until cheese is melted. Garnish with parsley, if desired, before serving.
