Making Cheesecakes in mini size has been the answer to all of my treat problems. They’re rich enough that you get plenty to enjoy but small enough that they don’t blow a whole day of calories in one treat. Win Win I say.
I keep a regular stash rotating through my freezer for when treat time strikes."

Serves or Makes: 12 mini cheesecakes

ingredients
- 8 tablespoons (aka 1/2 cup) almonds
- 1 tablespoon crushed peanuts
- 1 tablespoon cacao powder
- 1 cup Chopped dates (soaked in boiling water for 5 mins then drained)
- 2 tablespoons tahini
- 2 tablespoons stevia or other sweetener
- 2 tablespoons coconut oil
- 2 tablespoons Peanut Coconut Spread (or peanut butter)
- 3 tablespoons almond milk
- 2 tablespoons crushed peanuts
Method
Step 1
For the base: Blend almonds, peanuts, cacao until a meal is formed. Add 1/4 cup chopped dates and pulse until crumbly. Press into the base of 12 mini cheesecake molds.
Step 2
For the Filling: Blend all remaining ingredients except peanuts until smooth in a Vitamix. Stir in the peanuts. Spoon on top of the base crust. Place in the freezer overnight to set.
