For the Pancakes

ingredients

  • 1 cup whole wheat flour
  • 1 cup milk
  • 3 large eggs
  • 1/4 teaspoon salt
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • 1/4 cup oil (can use vegetable, coconut or canola)

Toppings

ingredients

  • 1/2 cup blueberries
  • 1/2 cup blackberries
  • 1/2 cup sliced apricots
  • 1/2 cup currants
  • 1/4 cup fresh mint leaves
  • 1/2 cup vanilla yogurt
  • 2-3 tbsp strawberry jam
  • 2-3 tbsp honey

Make the Pancakes

Method

  • Step 1

    Place the flour and the milk in a blender and blend for a few minutes. Add the rest of the ingredients and blend until just smooth.

  • Step 2

    Drop by large spoonfuls over a hot greased skillet and cook until golden and tiny bubbles form. (about 1 - 2 minutes)

  • Step 3

    Flip and cook on the other side until golden. (about 1 - 2 minutes)

To Decorate the Pancakes

  • Step 1

    Spoon a dollop of yogurt onto each pancake.

  • Step 2

    Place some of each fruit over that and drizzle with a little honey and jam. Garnish with the mint leaves.
