ingredients

  • 3 cups marinara sauce
  • 1 cup sliced bell peppers
  • 1 large shallot, sliced
  • 1 cup cooked couscous
  • 6 eggs
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons chopped fresh herbs
  • Extra virgin olive oil, as needed

Method

  • Step 1

    In a large skillet, heat 1 tablespoon olive oil to a shimmer. Add peppers and shallots and cook, stirring, for about 5 minutes, or until golden.

  • Step 2

    Add the marinara sauce and bring to a simmer over low heat. Once simmering, create 6 wells for the eggs and crack an egg into each one.

  • Step 3

    Add spoonfuls of the cooked couscous to the pan, and sprinkle with feta cheese. Continue to simmer until egg whites are set, but yolks are still runny, about 5-7 minutes.

  • Step 4

    Garnish with fresh herbs and serve.
