Fried Egg And Harissa Toast

Ingredients:
2 slices bread of choice
Gouda Cheese
1 Shallot
1/4-1/2 yellow or red bell pepper, sliced thinly
2 eggs
2 tbsp harissa
Salt & Pepper
Greens (optional)
Directions:
Top two slices of bread with thin sliced of gouda and toast in oven (480 F) or toaster oven for 3-5 mins or until melted. 
Chop a shallot and bell peppers into thin slices.
Fry 2 eggs in an oiled skillet along with the shallot & peppers.
Slide the eggs and some sauteed veggies over the toasted bread
Top with harissa, salt, pepper and greens.
