- 1/ 3 cup oil
- 1 large egg
- 4 thick slices halloumi
- 1 large slice ciabatta bread, toasted
- 3 tablespoon bruschetta topping (homemade or store-bought)
- 4 tomato slices
- 1/ 2 avocado, sliced
Heat 2 tablespoons oil in a skillet over medium-high heat. Once hot, crack the egg into the pan and fry until crispy and cooked, about 3-5 minutes. Spoon the hot oil onto the egg yolk to minimaize the cooking time.
Next, over medium heat, add another 3 to 4 tablespoons of oil to the frying pan. Fry the halloumi for 1-2 minutes on each side. Set fried halloumi to drain on a paper towel.
To assemble the toast, spoon the bruschetta topping onto the ciabatta bread. Top with sliced tomato, avocado, fried halloumi, and the fried egg.
