Bruschetta, Halloumi, and Fried Egg Toast

"Toasted ciabatta bread spread with bruschetta topping, fresh tomato slices, halloumi & avocado topped with a fried egg. Trying to figure out ways to use up those garden tomatoes!"

  • 1/3 cup oil
  • 1 large egg
  • 4 thick slices halloumi
  • 1 large slice ciabatta bread, toasted
  • 3 tablespoon bruschetta topping (homemade or store-bought)
  • 4 tomato slices
  • 1/2 avocado, sliced


  • Step 1

    Heat 2 tablespoons oil in a sk​ille​t over medium-high heat. Once hot, crack the egg into the pan and fry until crispy and cooked, about 3-5 minutes. Spoon the hot oil onto the egg yolk to minimaiz​​e the cooking time.

  • Step 2

    Next, over medium heat, add another 3 to 4 tablespoons of oil to the frying pan. Fry the halloumi for 1-2 minutes on each side. Set fried halloumi to drain on a paper towel.

  • Step 3

    To assemble the toast, spoon the bruschetta topping onto the ciabatta bread. Top with sliced tomato, avocado, fried halloumi, and the fried egg.
