ingredients
- 1 cup sugar
- 1/2 cup water
- strawberries, hulled
- ice water
- wooden skewers
Method
Step 1
Add the sugar and water to a deep saucepan.
Step 2
Heat the mixture to 300F / 150C (this should take 10-15 mins). Swirl don’t stir to avoid crystallization.
Step 3
If you don’t have a thermometer, dip one of the skewers into the sugar mixture, followed by the ice water. If the sugar hardens, your caramel is ready!
Step 4
Skewer the strawberries.
Step 5
Carefully dip the strawberries into the hot caramel, allowing the excess to drip off. Then dip the strawberries into the ice water to help the caramel set - enjoy!
