ingredients

  • 2 fillets wild salmon, washed and patted dry
  • Salt
  • Black pepper
  • 4 large leaves collard greens, hard stems removed
  • 1/2 cup hummus
  • 1 cup shredded carrots
  • 1 cup cucumber, sliced thin
  • 2 avocados, halved and sliced
  • 1/2 cup alfalfa sprouts
  • 12 spears asparagus, steamed until tender

Method

  • Step 1

    Preheat oven to 350ºF. Season salmon with salt and pepper. Place on a lined baking sheet and bake for 15-18 minutes, until just cooked through. Let cool and flake into small pieces.

  • Step 2

    Microwave each collard leaf on a paper towel one at a time to soften. Spread hummus in the middle of each leaf. Divide the salmon and spread over the hummus. Evenly distribute the carrots, cucumbers, avocado, alfalfa sprouts and asparagus between each collard leaf.

  • Step 3

    Carefully roll each leaf to create a wrap. Cut in half to serve.
