No-Churn Peach Sorbet

Is there anything better than biting into a juicy peach? That’s exactly what this fresh peach sorbet tastes like. Super-ripe peaches are frozen until solid, then pureed with cinnamon-spiced simple syrup for an easy no-churn method. Note: if your peaches are not super sweet, you can increase the amount of sugar to 1 cup, but at this time of year you likely won't have to!

  • 2 pounds (about 5-6 large) ripe peaches, pitted and small diced
  • 3/4 cup granulated sugar
  • 3/4 cup water
  • 1 1/2 limes, juiced
  • 1/4 teaspoon ground cinnamon, (optional)for serving
  • Pinch salt

Method

  • Step 1

    Freeze peaches in a single layer until solid, about 6 hours or overnight.

  • Step 2

    Meanwhile, bring sugar, water, lime juice, cinnamon, and salt to a boil in a small saucepan. Reduce heat to rapidly simmer for about 5 minutes. Remove from heat and cool completely. Simple syrup can be made up to 1 month ahead of time and stored in an airtight container in the refrigerator.

  • Step 3

    Add frozen peaches and simple syrup to a food processor and purée until completely smooth, about 7-8 minutes. Serve sorbet immediately for a creamier texture similar to soft-serve, or transfer to an airtight container for 1-2 hours before scooping into bowls.
