Girl Scout Cookie Ice Cream Sandwiches

Just when you thought beloved Girl Scout cookies couldn't get any more delicious: enter the ice cream sandwich! Feel free to use your favorite variety of cookies (mine are Samoas, Tagalongs, and Thin Mints!) and swap out ice cream flavors to your heart's content. Just be sure to let the sandwiches fully freeze before eating so the ice cream has time to set fully, otherwise it will squish out when you bite into it.

Method

  • Step 1

    Clear space in your freezer for the sandwiches.

  • Step 2

    Scoop about 1 tablespoon ice cream onto the bottom side of one cookie, then top with the second cookie and press down to adhere. Transfer to freezer and repeat with remaining cookies. Allow to freeze for at least 6 hours or ideally overnight.

  • Step 3

    Let ice cream sandwiches sit out for 5-10 minutes at room temperature before serving.

  • Step 4

    Transfer to an airtight container or ziplock bag for long-term storage, if they last that long!
