In my house, the Thanksgiving Leftovers Sandwich is almost as coveted as the Thanksgiving meal itself. And the beauty of it is that you can use whatever you have (which is why I don't call for specific quantities here). We love layering sliced of turkey, mashed potatoes or stuffing (or both!), tangy cranberry sauce, and some melty cheese the day after the feast to eat for lunch or dinner. One thing that really makes or breaks a Thanksgiving sandwich is the construction- layering the hearty ingredients strategically so they stick to one another and your bread doesn't do a split mid-bite. Another important factor is choosing the right knife to cut your sandwich! ingredients

  • Gravy
  • Turkey
  • 2 slices bread of choice
  • 4 slices cheese
  • Mashed potatoes or stuffing
  • Shaved Brussels sprouts or lettuce, (optional)
  • Pear and/or apple, thinly sliced
  • Crispy onions, (optional)
  • Cranberry sauce
  • Mayonnaise or softened butter

Method

  • Step 1

    Heat gravy in a small saucepan over medium-low heat. Add turkey and turn off heat. Set aside until ready to assemble.

  • Step 2

    Preheat a skillet over medium heat for 5 minutes.

  • Step 3

    Layer two slices of cheese over the bottom slice of bread. Spread mashed potatoes or lay stuffing overtop. Remove warm turkey from gravy and gently press to adhere. Top with shaved Brussels sprouts or lettuce, if using. Arrange sliced pear and/or apples on top, then cover with remaining cheese. Sprinkle crispy onions over cheese, if using. Spread cranberry sauce on the underside of the top slice of bread and press down to adhere. Spread bread with a thin layer of mayonnaise or softened butter, then toast in preheated pan until cheese is melted and bread is golden brown, about 5 minutes on each side.

  • Step 4

    Slice in half and serve hot with extra gravy for dipping, if desired.
