This delicious smoothie is a celebration of fall flavors! A creamy, lightly spiced mixture of fresh apples, apple cider ice cubes, and granola come together with cashews and dates for an irresistible combination that tastes like a caramel apple. We found that diced apples will keep fresh if they are first soaked in a saltwater solution for 5 minutes before being drained and stored in an airtight container for up to 5 days. Just stir in ¾ teaspoon of kosher salt into 1 ½ cups cold water and pour over the apples. This means you can meal prep some apples (and the apple cider ice cubes!) for easy smoothies whenever you need them.

ingredients

  • 1 cup ice cubes from apple cider or 100% pressed apple juice
  • 1/3 cup raw cashews
  • 2-3 whole medjool dates, pits removed
  • 1 heaping cup diced apple, any variety
  • 1/2 cup granola
  • 1/4 cup oat milk or other non-dairy milk
  • 1/2 teaspoon ground cinnamon
  • Pinch of sea salt
  • 1 - 2 tablespoons pure date syrup or molasses
  • Cinnamon granola, for topping and layering (optional)

Method

  • Step 1

    Make the ice cubes by pouring apple cider or 100% pressed apple juice (the cloudy kind) into a clean ice cube tray and freezing overnight. Store in an airtight container in the freezer for easy access when you need to make this smoothie!

  • Step 2

    Pour enough water to cover cashews and dates in a small bowl. Let soak for 20 minutes, then drain water.

  • Step 3

    Add diced apples, soaked cashews and dates, granola, oat milk, cinnamon, sea salt, and ice cubes to the Nutribullet® Ultra blender and blend for 30 seconds.

  • Step 4

    Swirl date syrup or molasses into a glass.

  • Step 5

    Add a few spoonfuls of granola to the bottom of the glass, then pour smoothie overtop. Top with more granola, if desired, and enjoy immediately.
