"Party time!!! Inspired (again) from the lovely Laura at @cookathomemom. Her vegan, whole30 cheesecake dessert recipe looked so good I had to give it a try. It turned out great and I topped it with whipped coconut cream and fresh organic berries! So fun & easy to make! Loved seeing my kids surprised eyes! Better than real cheesecake? Not quite - but a solid, good, healthy version!"

Recipe

For the Crust:

  • 1 cup walnuts
  • 1/ 2 cup raw cacao nibs
  • 1/ 4 cup unsweetened coconut flakes
  • 1/ 3 cup raisins
  • Pinch of salt

For the Cheesecake

  • 1 1/ 2 cups raw cashews
  • 1/ 2 large lemon
  • 3 tablespoon coconut milk
  • 1/ 4 cup coconut oil
  • 1/ 2 cup unsweetened apple sauce

For the Berry Topping

  • 1/ 2 cup mixed berries
  • 1 tablespoon lemon juice
