Whole30 Vegan Cheesecake
Party time!!! Inspired (again) from the lovely Laura at @cookathomemom. Her vegan, whole30 cheesecake dessert recipe looked so good I had to give it a try. It turned out great and I topped it with whipped coconut cream and fresh organic berries! So fun & easy to make! Loved seeing my kids surprised eyes! Better than real cheesecake? Not quite - but a solid, good, healthy version! -@lisa_vipond


Yield: Serves or Makes 30
Buy ingredients
Add ingredients directly to your favorite online grocery cart (where available).

For the Crust:


  • 1 cup walnuts
  • 1/2 cup raw cacao nibs
  • 1/4 cup unsweetened coconut flakes
  • 1/3 cup raisins
  • Pinch of salt

For the Cheesecake


  • 11/2 cups raw cashews
  • 1/2 large lemon
  • 3 tbsp coconut milk
  • 1/4 cup coconut oil
  • 1/2 cup unsweetened apple sauce

For the Berry Topping


  • 1/2 cup mixed berries
  • 1 tbsp lemon juice
