It turned out great and I topped it with whipped coconut cream and fresh organic berries! So fun & easy to make! Loved seeing my kids surprised eyes! Better than real cheesecake? Not quite - but a solid, good, healthy version!"

For the Crust:
- 1 cup walnuts
- 1/ 2 cup raw cacao nibs
- 1/ 4 cup unsweetened coconut flakes
- 1/ 3 cup raisins
- Pinch of salt
For the Cheesecake
- 1 1/ 2 cups raw cashews
- 1/ 2 large lemon
- 3 tablespoon coconut milk
- 1/ 4 cup coconut oil
- 1/ 2 cup unsweetened apple sauce
For the Berry Topping
- 1/ 2 cup mixed berries
- 1 tablespoon lemon juice
