I grew up with my dad making these potatoes on Sundays, during the winter, like clockwork. I love these and absolutely love caramelized shallots - the crispier the better! "

RECIPE
Halve potatoes. Put potatoes in bowl and mix with 2 T of bacon grease and toss until lightly covered. Bake 20 minutes at 400F on cookie sheet
Thinly slice 4 – 5 shallots. In frypan, heat up 2 T of bacon grease. Put shallots in pan and cook on high heat until wilted. Take 1 T of maple syrup and drizzle over shallots. Cook until crispy or desired taste. Scoop a spoonful of shallots and set aside. Scrape remaining shallots to side of fry pan. Put potatoes in pan and fry for 10 minutes tossing around the shallots. Put 2 pinches of truffle salt on potatoes and let cook in. When done, put potatoes in serving bowl and top with remaining shallots, garnish and serve!
