Roasted Delicata and Caramelized Onion Pizza

The diced tomato base (1 can of Muir Glen Diced Tomatoes sautéed with 1 tbsp olive oil and fresh garlic) in place of traditional sauce adds so much flavor, and these tomatoes are the absolute best. ingredients

  • 3 tablespoons olive oil
  • 2 medium red onions, thinly sliced into half moons
  • 1 batch Organic refrigerated pizza dough
  • 1 (14.5 ounce) can Muir Glen Diced Tomatoes
  • 2 delicata squash, thinly sliced
  • 1 clove garlic, minced
  • Fresh basil

Method

  • Step 1

    Heat with 2 tablespoons olive oil over medium heat and add onions and cook, stirring occasionally, until caramelized. About 45 minutes.

  • Step 2

    While the onions are caramelizing preheat the oven to 350˚F.

  • Step 3

    Toss the delicata squash with olive oil or spray with olive oil spray. Add to a sheet pan and bake for about 20 minutes.

  • Step 4

    While the squash is baking prep the tomatoes. Add remaining olive oil to a medium sized pan over medium heat and add garlic. Strain tomatoes and add to the olive oil and garlic mix.

  • Step 5

    Roll out pizza dough to desired size/shape. Transfer to baking sheet.

  • Step 6

    When the onions have finished caramelizing and the squash has finished baking, turn oven up to 450˚F.

  • Step 7

    Transfer rolled out dough to a baking sheet and poke the top of the dough with a fork. Add tomato layer first, followed by onions and squash. Bake for 11 minutes or until done (ovens vary)

  • Step 8

    When the pizza is done remove from oven and top with fresh basil.
