ingredients

  • 1/3 cup Annie's Organic Sesame Ginger Vinaigrette
  • 1 pound salmon, cut into 4 portions
  • 2 hothouse cucumbers, thinly sliced
  • 1 jalapeño, thinly sliced
  • Handful of fresh mint leaves, chopped
  • 1/2 cup seasoned rice vinegar
  • 1/2 teaspoon salt
  • 1 teaspoon sugar

Method

  • Step 1

    Pour ¼ cup Annie’s Sesame Ginger Vinaigrette into the bottom of medium bowl or baking dish

  • Step 2

    Marinate salmon portions skin side facing up in dish for 5 minutes

  • Step 3

    Mix cucumber slices, hot pepper, mint, vinegar, salt, + sugar together in a large mason jar or medium bowl. Chill cucumber salad in the refrigerator, stirring every 5 minutes while salmon is cooking.

  • Step 4

    After salmon has marinated for 5 minutes, place skin side down in air fryer

  • Step 5

    Air Fry at 400°F for 8 minutes

  • Step 6

    Drizzle salmon with remaining vinaigrette and air fry an additional 1-2 minutes until cooked through, browned and crispy on edges

  • Step 7

    Using a slotted spoon to eliminate excess pickling juices, place ¼ cucumber salad topped with 1 salmon portion on each plate. Serve immediately!
