ingredients

  • 2 tablespoons Annie's Organic Asian Sesame Dressing
  • 1/4 block cubed firm tofu
  • coconut aminos or liquid aminos, for marinating
  • 2 ounces flat pad Thai rice noodles
  • 1 tablespoon sesame oil
  • 1/2 bell pepper, thinly sliced
  • 1/3 cup carrot, julienned
  • 1/3 cup cabbage, thinly sliced
  • 1/3 cup cucumber, thinly sliced
  • 1/2 tablespoon crushed peanuts
  • 1/2 tablespoon fresh basil
  • 1/2 tablespoon minced chives
  • 1 lime wedge

Method

  • Step 1

    Place tofu in a shallow bowl. Drizzle with coconut aminos (or liquid aminos) and set aside to marinate for at least 15 minutes.

  • Step 2

    Prepare noodles according to package directions and set aside.

  • Step 3

    Once the tofu has marinated, add to a skillet with sesame oil. Cook the tofu for a few minutes until browned and slightly crispy.

  • Step 4

    Add noodles to a bowl. Top with tofu, bell pepper, carrot, cabbage and cucumber. Drizzle with Annie’s Organic Asian Sesame Dressing. Top with crushed peanuts, basil, chives, and lime wedge.
