Apple & Rhubarb Crumble

"RECIPE:
Serves 6-8
Gluten free/ Dairy free/ Vegan
Ingredients:
4 pink lady apples
4 stalks of rhubarb
1/2 lemon, juice only
1/2 teaspoon cinnamon
Pinch vanilla bean powder
Crumble:
1 1/4 cups gluten free oats
1/2 cup desiccated coconut
1/4 cup macadamia nuts
1/4 cup organic coconut oil (melted)
1/4 cup coconut sugar
2 Tbs flaxseed meal
1/2 teaspoon cinnamon
Pinch of nutmeg
Pinch of salt

Method:
1. Pre heat oven to 180*C
2. Chop up apples and rhubarb into small cubes, add into bowl, squeeze the lemon juice on top along with cinnamon and vanilla, mix until evenly coated then add into a baking dish.
3. In a food processor, add in the oats, desiccated coconut, macadamia nuts and pulse a few times so it's roughly chopped up, transfer to a large bowl.
4. Add in all remaining crumble ingredients and mix until well combined (you may use your hands).
5. Place crumple over the apples and rhubarb until completely covered, place in oven and cook for about 40mins or until golden brown.
6. When it's ready, take out and let it sit for a few minutes. Serve with coconut yogurt or topping of your choice and enjoy!"
