Quick, Easy, Breakfast
Ingredients:
1 Large egg
1 tbsp whole milk or heavy cream
1 tbsp olive oil for frying the egg (or per taste)
2 tbsp crumbled queso fresco (or more per taste)
About 1 tbsp chopped parsley (or herb of choice)
Salt+pepper to taste

Method:
- Heat oil in a saucepan over medium flame
-Whisk together the egg, milk/heavy cream, salt and pepper until well combined and slightly frothy
- Pour the egg mixture into the saucepan. Move the pan gently to make sure the egg mixture is spread evenly
-Give the egg about 30 secs to a minute or so to cook, then gently flip to cook the other side
- Top the cooked side with crumbed queso fresco and chopped herbs
- Give the other side another 30 secs of so and then gently fold the omelette before removing on a plate
