Potato Rosti Topped With Fried Eggs

Wash and Peel 1 Large Potato and then Grate over a bowl filled with cold water then drain and rinse in sink.
Squeeze excess water out of the potato and pat dry with a clean kitchen towel or paper towels. Season potatoes with salt.
Heat a small skillet over medium to medium high heat and add about 1 teaspoon of canola oil to the hot pan and swirl it around to cover the entire surface.
Add potatoes and fold over with a spatula as they begin to brown.
Press into the pan so that the rosti forms a large circle in the bottom of the pan and then add a few handfuls of grated cheese and 2 scallions thinly sliced - carefully combine and let cook for 10 minutes over medium low heat.
Then place a plate on top of the pan and invert it so the rosti sits, cooked-side up, on the plate.
Place the same pan back over the heat and add a splash of oil or butter.
Crack 2 eggs directly into the pan and fry until whites are cooked through.
