Mashed potatoes are amazing along but turn the leftovers into a waffle and you have something magical… may I suggest topping with some sautéed spinach and a poached egg for a perfect meal.
Yield: 4 waffles 2 cups leftover mashed potatoes 2 eggs, lightly beaten 1/4 cup all purpose flour 1/4 tsp salt 1/2 cup packed shredded sharp cheddar 1 tablespoon fresh scallion, sliced then chopped Preheat waffle maker to medium heat setting. In a medium bowl combine mashed potatoes, egg, flour and salt. Beat by hand or on on low speed 30-60 seconds until a thick batter like consistency forms. Fold in cheese and scallion until fully combined. Drop 1/2 cup of batter into the center of the waffle maker, or two scoops with a 1/4 cup ice cream scoop. Press closed and cook for 5 minutes*, until rapid steam release slows down and waffle is golden brown. Remove, let cool for a a few minutes. Serve warm. *Waffle cooking time & temperature may vary depending on your waffle maker. Please refer to your waffle maker instruction guide.
