Spiralized Sweet Potato Egg Nests

- 4 sweet potatoes, scrubbed and spiralized
- 2 tablespoons oil of choice (ghee or avocado oil
- 8 eggs
- salt and pepper, to taste
Working in batches, heat half of the oil in a large nonstick skillet. Add half of the sweet potato noodles and sauté until tender (about 5 minutes). Once tender form the noodles into four nests and crack an egg into each one.
Cook the eggs covered over medium heat until the whites set, and the yolk is cooked to your liking (about 3 minutes for runny yolks). Season to taste with salt and pepper and serve. Repeat the process with remaining oil, sweet potatoes and eggs.
