Pasta With Butternut Squash Cashew Sauce

"thick...creamy...cheesy and slightly sweet... and dairy free! it also doubles as a delicious dip for cooked broccoli and carrots! think fondue..without the belly ache. pictured here with @eatbanza cavatappi pasta and some baby kale! i dont soak my cashews because (#reallife who got time for that) but you can if you want to! Blend all dry ingredients in a @vitamix for 30 seconds. slowly add in the water, then blend few minutes til creamy on high. i dare you not to lick the spoon."

ingredients

  • 1/3 cup roasted butternut squash
  • 1/3 cup raw unsalted cashews
  • 2 tablespoon olive oil
  • 1/4 teaspoon salt
  • Juice of 1/4 lemon
  • 1 tablespoon nutritional yeast
  • 1/4 cup filtered water (or more depending on how thick you want it)
  • Cracked fresh pepper to taste

Method

  • Step 1

    Blend all dry ingredients in a blender for 30 seconds. slowly add in the water, then blend few minutes until creamy on high.

  • Step 2

    Serve with pasta of choice.
