"No need for a plate - we’re going straight out of the pan for this one. Did I mention that it feels really good to be cooking again? I’m not making anything groundbreaking, but cooking and picking out ingredients has always been an important part of showing myself some love. Today we have some lazy tomato-y eggs with kale, leftover roasted sweet potato, and feta. Lazy cuz I used some already tasty leftover tomato sauce as the base and it took 10 minutes, mostly hands off."
