Breakfast Farro Bowl with Avocado, Kale, and a Soft Boiled Egg

  • 1 tablespoon olive oil
  • 1 cup mushrooms, sliced
  • 2 sliced scallions
  • 1 cup kale
  • Kosher salt and freshly ground black pepper, To Taste
  • 1/2 cup cooked farro
  • 1 large egg
  • 1/2 avocado, sliced
  • 1 tablespoon chives, chopped


  • Step 1

    Heat oil in a medium skillet over medium high. Cook mushrooms and scallions until cooked down, about 5 minutes. Add kale and cook until wilted, about 2 minutes. Season to taste. Add farro and cook until warmed, about 2 minutes. Transfer to a bowl.

  • Step 2

    Bring water to a boil in a small saucepan. Gently lower down an egg with a spoon, and cook for 6 minutes. Transfer to an ice bath immediately. Once cool, peel away shell.

  • Step 3

    Top farro mixture with soft boiled egg, chives, avocado, and serve immediately.
