Miso Ginger Soba Noodles

Sharing one of my beloved lunches: miso-ginger soba noodles. Very fast to make, easily transportable, fresh and light, great cold, and super gingery. I always regret not making a bigger batch. -@le_weston
Yield: Serves or Makes serves 4
Add ingredients directly to your favorite online grocery cart (where available).
- 2 tablespoons grated fresh ginger
- 11/2 tablespoons miso
- 1 large clove of garlic
- 11/2 tablespoons soy sauce or tamari
- 1 tablespoon maple syrup
- Juice of 1 lime
- Sriracha, to taste
- 1 teaspoon sesame oil
- 2 bushels soba noodles
- 2 large carrots, spiralized
- 2 cups shredded kale
- 1 cup shelled edamame
- Top with sesame seeds
For the glaze, combine ginger, miso, garlic, tamari, maple syrup, lime juice, sriracha, and sesame oil in a high speed blender.
To assemble, toss remaining ingredients together and add the ginger-miso glaze. Serve immediately.
