ingredients

  • 2 tablespoons grated fresh ginger
  • 1 1/2 tablespoons miso
  • 1 large clove of garlic
  • 1 1/2 tablespoons soy sauce or tamari
  • 1 tablespoon maple syrup
  • Juice of 1 lime
  • Sriracha, to taste
  • 1 teaspoon sesame oil
  • 2 bushels soba noodles
  • 2 large carrots, spiralized
  • 2 cups shredded kale
  • 1 cup shelled edamame
  • Top with sesame seeds

Method

  • Step 1

    For the glaze, combine ginger, miso, garlic, tamari, maple syrup, lime juice, sriracha, and sesame oil in a high speed blender.

  • Step 2

    To assemble, toss remaining ingredients together and add the ginger-miso glaze. Serve immediately.
