Coconut Yogurt And Berry Compote Parfaits

"I'm having one of those super positive, motivated days today (gotta take advantage of them!!). I wonder if it has ANYTHING to do with the new Robovac we bought... I seriously think this thing is going to change my life. During busy times like this, having quick, on-the-go vegan breakfasts is a must. This one was a SUPER simple berry compote with coconut yoghurt.⠀"

Ingredients:

1 cup frozen (or fresh) berries⠀
1 tbsp Maple Syrup⠀
1 tsp arrowroot powder (or cornstarch), mixed with 1 tbsp water⠀
Coconut yoghurt (however much you want!)⠀
Granola for topping⠀

Directions:

Put the berries and maple syrup in a saucepan and heat until the berries have burst and the mixture is like a soft jam. Then add the arrowroot and water mixture and stir through until the berries thicken. Allow to cool slightly.

Serve topped with the coconut yoghurt and granola!⠀
