1 slice whole wheat bread, toasted
1/2 tbsp butter or oilive oil
1 tbsp milk
salt and freshly ground black pepper
1 tbsp salsa
handful of fresh arugula
1 tbsp grated cheddar cheese
Heat a small skillet over medium heat and add a butter or olive oil. In a small bowl, beat the egg and milk together with a fork until well combined. Season to taste to salt and pepper.
Add the egg mixture to the skillet and turn heat to low. Using a heat safe spatula or wooden spoon, move the egg around the pan until set and cooked through.
Add the eggs to the toast and top with arugula, cheddar cheese and salsa.
