Scrambled Egg Toast With Arugula, Salsa And Cheddar Cheese

  • 1 slice whole wheat bread, toasted
  • 1/2 tablespoon butter or olive oil
  • 1 egg
  • 1 tablespoon milk
  • Salt and freshly ground black pepper
  • 1 tablespoon salsa
  • a handful of fresh arugula
  • 1 tablespoon grated cheddar cheese


  • Step 1

    Heat a small skillet over medium heat and add a butter or olive oil. In a small bowl, beat the egg and milk together with a fork until well combined. Season to taste to salt and pepper.

  • Step 2

    Add the egg mixture to the skillet and turn heat to low. Using a heat-safe spatula or wooden spoon, move the egg around the pan until set and cooked through.

  • Step 3

    Add the eggs to the toast and top with arugula, cheddar cheese and salsa.
