Paella De Verduras With Red Pepper, Zucchini & Artichokes

1 cup rice

2 1/2 cups water

1/2 of a red pepper (cut in strips)

1/2 of a zucchini (chopped thinly)

2 artichokes (peeled and cut into quarters)

2 tomatoes (chopped small)

2 garlic cloves (minced)


1/3 cup olive oil




Heat oil in a paella pan and then add red pepper. Cook for a few minutes and then remove. 

Add zucchini and artichoke, cook until browned and remove from pan.

Add garlic, tomatoes and parsley to pan. Cook for a few minutes and then add rice and juice on a lemon, Mix a few times and then add the water and cooked vegetables. 

Cook over high heat for 10min, and then lower heat for another 10min. Let rest for 5 or so minutes.
