ingredients

  • 1/2 pound unsalted butter
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 2 cups flour
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • Choice of jam

Method

  • Step 1

    Preheat the oven to 350 F. Line a cookie sheet with parchment paper.

  • Step 2

    Combine butter and sugar in a bowl and beat with a mixer until they become light and fluffy.

  • Step 3

    Add the flour slowly and mix to combine.

  • Step 4

    Add the egg yolks, salt and vanilla extract and mix together until a dough forms.

  • Step 5

    Shape the dough into 1 inch balls and flatter slightly with your hands. Using your thumb, press a bit in the center to make room for the jam.

  • Step 6

    Place the dough on the cookie sheet about an inch apart and add a dollop of jam to the center of each cookie.

  • Step 7

    Bake for approximately 25 minutes, or until golden.
