"Homemade Granola + Milk just hits the spot sometimes. ❤️ Granola is one of those phase things for us. When we love it, we’re ALL in... and then there are months where we don’t eat it at all. 😂 Do you have foods like this? • Today on stories @lalalunchbox I’m showing you how I make my granola - nut free and sweetened with maple syrup. It’s totally versatile and changes depending on what seeds and dried fruit I have on hand. 😉 When I make it, I wonder why I don’t make it more. Life is funny that way. • Today I’m serving it with oat milk (my kids don’t like cow’s milk, but of course, any milk works here). The milk won’t leak because it’s got a silicone leakproof lid. 🙂 Anyway, breakfast for lunch is fun, and fun is good. 🥰 • Also today: apple slices (with lemon juice to help with browning), blueberries, carrots and a salted tahini chocolate chip cookie. 😋 • The cookie recipe is from @healthygffamily in a recipe adapted from @dianemorrisey and is a perfect example of why I love the collaborative spirit of the Internet. ❤️"

ingredients

  • 3 cups rolled oats
  • 1 1/2 cups mixed seeds
  • 1/2 cup dried unsweetened coconut
  • 1/2 cup olive oil
  • 1/2 cup maple syrup
  • 1 teaspoon kosher salt
  • mixed dried fruit, chopped

Method

  • Step 1

    Preheat oven to 350°. Line a rimmed baking sheet with parchment paper.

  • Step 2

    Toss oats, seeds and coconut in a large bowl. Add oil and syrup and stir until well coated. Season with 1 teaspoon salt.

  • Step 3

    Spread out onto the pan and bake for about 25-30 minutes, stirring once halfway through.

  • Step 4

    Use the same bowl for the dried fruit pieces, and add the oats back to the bowl after they cool for 5-10 minutes, and combine.

  • Step 5

    Don’t clean up the baking tray yet. Pour the mixed granola onto it and let the whole thing cool for a while.

  • Step 6

    Taste and adjust the salt if needed.
