"I made SCOFFLES yesterday. 😋 What are those, you ask? They’re scones that I made in the waffle iron and HOLY COW I am in love. ❤️ I had some wilting dill in the fridge, and I’ve been meaning to try a scone recipe that I saw from @bluehousekitchendc recently. Turns out I didn’t have cheddar, just Monterey Jack. And I had shallots, not onions. No problem, I adapted the recipe. • As I was making them, I spied my waffle maker and I thought hmm... what would happen if I made scones into waffles? 🤔 • That’s when the fun began. I made both scones and scoffles! While the scone waffles were super tasty, I still prefer the straight up scone. 😍 • I actually packed all 3 lunches at like 2:00 pm to make sure that I had set enough aside because I couldn’t stop nibbling. 🤪 You can see more on Stories @lalalunchbox 💙 It’s funny because while I like scones, I don’t love them. Recipe Card

ingredients

  • 3 cups all purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 8 tablespoons unsalted butter, at room temperature
  • 1 cup milk, plus 1 tablespoon, divided
  • 1 cup monterey jack cheese, grated
  • 1 large shallot, diced
  • 3 tablespoons fresh dill, chopped

Method

  • Step 1

    Preheat oven to 400 F. Line a baking sheet with parchment paper. In a large mixing bowl, combine the flour, baking powder and salt. Cut in the butter with the tines of a fork or your hands. Add milk and mix until just incorporated.

  • Step 2

    Add the shallot and dill and use your hands to make sure everything is well distributed. Place the dough on a lightly floured surface and knead it for just about 1 minute. Press the dough down and make a circle about 1 1/2 inch thick. Cut the dough into 8 equal pizza slices and separate slightly. Place on baking sheet. Bake for 27-30 mins. To make these into Scoffles, place the dough on your waffle iron and cook until golden brown - takes just minutes!
