  • SPISY MISO PASTE:
  • 130 gram white miso paste
  • 130 gram red miso paste
  • 80 gram sichuan douban chili paste
  • 1 onion, cut into chunks
  • 33 gram ginger, cut into chunks
  • 60 tablespoon mirin (Japanese sweet rice wine)
  • 2 tablespoon vegetable oil
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon dashi granules
  • 17 gram sesame paste (if Asian brands are unavailable, use tahini)
  • 6 cloves smashed garlic
  • SHOYU SOFT-BOILD EGGS:
  • 4 large free-range eggs
  • 3 tablespoon soy sauce
  • 2 tablespoon dark brown sugar
  • 1 tablespoon water
  • GARLIC AND TOGORASHI OIL:
  • 2 small shallots, finely minced
  • 2 cloves garlic, finely minced
  • 1/2 teaspoon sesame seeds
  • 1 pinch sea salt
  • 1/4 cup vegetable oil
  • 2 1/2 tablespoon Japanese seven spice (shichimi togarashi)
