- SPISY MISO PASTE:
- 130 gram white miso paste
- 130 gram red miso paste
- 80 gram sichuan douban chili paste
- 1 onion, cut into chunks
- 33 gram ginger, cut into chunks
- 60 tablespoon mirin (Japanese sweet rice wine)
- 2 tablespoon vegetable oil
- 1 tablespoon toasted sesame oil
- 1 tablespoon dashi granules
- 17 gram sesame paste (if Asian brands are unavailable, use tahini)
- 6 cloves smashed garlic
- SHOYU SOFT-BOILD EGGS:
- 4 large free-range eggs
- 3 tablespoon soy sauce
- 2 tablespoon dark brown sugar
- 1 tablespoon water
- GARLIC AND TOGORASHI OIL:
- 2 small shallots, finely minced
- 2 cloves garlic, finely minced
- 1/2 teaspoon sesame seeds
- 1 pinch sea salt
- 1/4 cup vegetable oil
- 2 1/2 tablespoon Japanese seven spice (shichimi togarashi)
