Balinese Style Sate
If you were, like me, never very into the idea of sate/satay, then let this summer, like mine, be a revelation. Carefully scored chicken thighs clothed in a Balinese-style, reduced and intensely aromatic paste, charred over the grill then dipped in a spicy and sweet peanut sauce deepened with puréed chicken livers. Get dirty. And I'm not just talking about the sauce.
