ingredients
- 4 eggs, beaten
- 1 cup baby spinach
- 1 tomato, diced
- 1/2 cup crumbled feta cheese
- 1 small chili pepper (optional), minced
- salt
- pepper
- olive oil, for cooking
Method
Step 1
In a small bowl, whisk together eggs, salt, pepper.
Step 2
Add spinach, tomatoes, feta and chili to the egg mixture.
Step 3
Heat olive oil in a frying pan over over medium heat. Pour in the egg mixture and lower the heat. Let it set for about a minute and then start stirring to remove the eggs from the pan.
Step 4
Cook for about 5 to 8 minutes until the eggs are cooked but not too dry. Serve with wholemeal bread. Serve with a few salad leaves.
