once a month i make a big batch of granola bars that are “like the good ones from the store,” according to my kids. they’re a ringer for the chocolate chip quaker oat bars at a fraction of the price (and a fraction of the ingredients!).

ingredients

  • 4 cups oats
  • 4 cups rice cereal
  • 8 tablespoons butter
  • 1/2 cup brown sugar or coconut sugar
  • 2/3 cup honey
  • 1 tablespoon vanilla
  • Pinch of salt
  • 1/2 cup mini chocolate chips

Method

  • Step 1

    On a sheet pan, toast the oats in the oven for a few mins at 350.

  • Step 2

    In a saucepan over medium heat, melt butter, brown sugar, honey and salt together and stir until the sugar dissolves. Let simmer for 2 - 3 minutes. remove from heat and stir in vanilla and allow to cool slightly.

  • Step 3

    Combine toasted oats and rice cereal in a large bowl. pour honey mixture on top and stir to coat. Allow to fully cool before stirring in chocolate chips.

  • Step 4

    Line a 12 x 16 cookie sheet with plastic wrap and spread oat mixture evenly (buttered hands help prevent sticking!).

  • Step 5

    Even everything out with a rolling pin, using the cookie sheet as a guide. Sit at room temp for a few hours before cutting. Refrigerating speeds up the process but it makes the bars more prone to crumbling.

  • Step 6

    Store in an air tight jar.
