Avocado Toast with Fried Eggs, Goat Cheese and Fresh Dill

When all else fails, avocado toast! Finding yourself sans 'cados? Try this version of smashed pea toast by our @jakecohen. It's like spring sunshine on a plate!

  • olive oil, as needed
  • 2 eggs
  • 2 slices sourdough bread, toasted
  • 1 avocado
  • kosher salt, to taste
  • black pepper, to taste
  • 1 tablespoon crumbled goat cheese
  • fresh dill, to taste


  • Step 1

    In a medium skillet, heat a thin layer of olive oil over medium heat. Add eggs and cook for about 3 minutes, or until cooked to your liking.

  • Step 2

    Mash avocado flesh with a fork and divide between the toast. Season to taste with salt and pepper. Top each slice of toast with a fried egg and sprinkle each with crumbled goat cheese. Sprinkle with fresh dill and enjoy.
