  • 6 crisp, tart apples (such as McIntosh, Granny Smith, or Honeycrisp), chopped into small cubes
  • 2 tablespoons coconut or brown sugar
  • 2 tablespoons cornstarch or tapioca starch
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter
  • 2/3 cup coconut or brown sugar
  • 1 cup rolled oats
  • 1 1/4 cup gluten-free baking flour or oat flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon sea salt

Method

  • Step 1

    Preheat the oven to 350°F.

  • Step 2

    In a large oven-safe skillet or a rectangular pan, heat the unsalted butter over medium heat. You can use a cast iron skillet if available. Let it cook for 6-8 minutes, stirring frequently, until it becomes fragrant and develops brown flecks. Remove it from heat and stir in the rolled oats, coconut or brown sugar, gluten-free flour, cinnamon, and sea salt. Once everything is well combined, remove the crisp topping from the skillet and set it aside.

  • Step 3

    In the same skillet (or your rectangular pan), combine the chopped apples with the 2 tablespoons of coconut or brown sugar, 2 tablespoons of cornstarch or tapioca starch, fresh lemon juice, vanilla extract, and 2 teaspoons of cinnamon. Mix everything thoroughly to ensure the apples are well coated.

  • Step 4

    Spread the prepared crisp topping evenly over the apple mixture in the skillet.

  • Step 5

    Place the skillet or pan in the preheated oven and bake for 40-45 minutes, or until the crisp topping is lightly browned, and the apples are tender.

  • Step 6

    Once the apple crisp is done, remove it from the oven and let it cool for a bit.

    Serve the apple crisp with a scoop of vanilla ice cream if desired.
