Mediterranean Hummus Wrap

"MEDITERRANEAN HUMMUS WRAP | This was one of those last minute lunch wraps that turned out to be unbelievable in both flavor and texture. It starts with a lightly steamed brown rice tortilla (steaming makes it soft and pliable so it won't crumble when rolling up), a generous spread of creamy oilfree garlic hummus, artichoke hearts, fresh red bell pepper, finely sliced onion, lentils, shaved romaine, spicy baked chic peas and kalamata olives. Mmmm. The baked chic peas gave it the perfect crunch and the kalamata olives added big bold Mediterranean flavor. I've been absolutely lovin' fresh veggie and hummus wraps lately. So easy and quick to prepare."

  • 4 brown rice tortillas
  • 1/2 cup garlic hummus
  • 1 (15-oz) can artichoke hearts, drained
  • 1 red bell pepper, sliced
  • 1 red onion, finely sliced
  • 1 cup cooked lentils
  • 1/2 cup shaved romaine
  • 1 cup roasted chickpeas
  • 1/2 cup kalamata olives


  • Step 1

    Steam tortillas until fully warmed. Divide hummus among the steamed tortillas & top with all ingredients. Roll & enjoy!
